  • 2 (8 ounce) packages cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup cherry pie filling

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of each cupcake liner.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs, mixing until just combined.
  4. Pour the cream cheese mixture over the crust in each liner.
  5. Bake for 20-25 minutes until set. Remove from the oven and let cool.
  6. Top each cheesecake with cherry pie filling before serving.
