  • 8 large eggs
  • 6 slices turkey bacon
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 cup spinach, chopped
  • 1 cup shredded cheese
  • 4 large tortillas
  • 1 tablespoon olive oil

Instructions

  1. Cook the turkey bacon in a skillet until crispy, then remove and chop into pieces.
  2. In the same skillet, add olive oil, diced onion, and bell pepper. Sauté until softened.
  3. Add chopped spinach and cook until wilted.
  4. In a bowl, whisk the eggs and pour them into the skillet. Scramble with the veggies and bacon until fully cooked.
  5. Remove from heat and let cool slightly.
  6. Lay tortillas flat and scoop the egg mixture evenly onto each.
  7. Sprinkle with cheese and roll the tortillas tightly.
  8. Wrap each burrito in foil and refrigerate or freeze.

Notes

  • For extra flavor, add spices such as cumin or paprika to the egg mixture.
  • These burritos can be made up to a week ahead for meal prep.
