Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine flour, butter, sugar, and salt to form a crust.
  3. Press the mixture into a pie pan and bake for 20 minutes.
  4. In a saucepan, whisk together eggs, 1 cup sugar, cornstarch, and water until smooth over medium heat.
  5. Add lemon juice and zest, continue to stir until thickened.
  6. Pour into the crust.
  7. For the meringue, beat eggs and cream of tartar until soft peaks form.
  8. Gradually add 1/2 cup sugar, beat until stiff peaks form.
  9. Spread meringue over the lemon filling and bake for an additional 10 minutes.
  10. Let cool before serving.
