Low-Carb Bacon Cheeseburger Casserole

A comforting low-carb dish that combines the flavors of a classic bacon cheeseburger in a delicious casserole form.

  • 1 pound ground beef
  • 8 slices bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/4 cup diced pickles
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1 tablespoon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the bacon until crispy, then remove and crumble it.
  3. In the same skillet, brown the ground beef with onions until fully cooked.
  4. In a mixing bowl, whisk together the eggs, heavy cream, mustard, garlic powder, salt, and pepper.
  5. Stir in the crumbled bacon, diced pickles, and half of the cheese to the ground beef mixture.
  6. Pour the egg mixture over the ground beef mixture and stir to combine.
  7. Transfer the mixture to a greased casserole dish and top with the remaining cheese.
  8. Bake for 25–30 minutes or until the top is golden brown and the casserole is set.
