  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 4 slices turkey bacon

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, melted butter, lemon juice, and lemon zest.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a skillet over medium heat and grease lightly.
  5. Pour 1/4 cup of batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. In a separate pan, cook the turkey bacon until crispy.
  8. Serve pancakes topped with turkey bacon and syrup.

Notes

  • For extra lemon flavor, add more lemon zest.
  • Serve with fresh fruit for added freshness.
