- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup powdered sugar
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
- In a mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and flour, mixing until well incorporated.
- Add the eggs one at a time, mixing well after each addition. Then stir in the sour cream, lemon juice, and lemon zest.
- Pour the filling over the crust and bake for 50-60 minutes, or until the center is set.
- In the meantime, prepare the meringue. Beat the egg whites and cream of tartar until soft peaks form. Gradually add powdered sugar and beat until stiff peaks form.
- Spread the meringue over the baked cheesecake and return to the oven for an additional 10 minutes, or until the meringue is golden.
- Let it cool before refrigerating for at least 4 hours or overnight to set.
