A delightful treat that combines the creamy texture of cheesecake with the bright flavor of lemon and the airy sweetness of meringue.

  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and flour, mixing until well incorporated.
  4. Add the eggs one at a time, mixing well after each addition. Then stir in the sour cream, lemon juice, and lemon zest.
  5. Pour the filling over the crust and bake for 50-60 minutes, or until the center is set.
  6. In the meantime, prepare the meringue. Beat the egg whites and cream of tartar until soft peaks form. Gradually add powdered sugar and beat until stiff peaks form.
  7. Spread the meringue over the baked cheesecake and return to the oven for an additional 10 minutes, or until the meringue is golden.
  8. Let it cool before refrigerating for at least 4 hours or overnight to set.

Notes

  • For best flavor, use fresh lemons for juice and zest.
  • Make sure the cream cheese is at room temperature to avoid lumps.
