  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 large eggs
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the buttermilk, sugar, lemon juice, lemon zest, and eggs until smooth.
  3. In a separate bowl, mix cornstarch and salt, then gradually add it to the wet mixture, stirring to combine.
  4. Pour the mixture into a greased baking dish and place it in a larger baking pan filled with hot water.
  5. Bake for about 45 minutes, or until set.
  6. Remove from the oven and allow to cool before chilling in the refrigerator for at least 2 hours.
