King Ranch Chicken Casserole

A hearty and flavorful casserole that’s perfect for family gatherings or weeknight dinners.

  • 3 cups cooked, shredded chicken
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar and monterey jack mix)
  • 12 corn tortillas, cut into quarters
  • 1/2 cup chopped onion
  • 1/2 cup bell pepper, diced
  • 1 tablespoon taco seasoning

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine chicken, both soups, salsa, and seasonings. Mix well.
  3. Layer half of the tortillas in a greased 9×13 inch baking dish.
  4. Spread half of the chicken mixture over tortillas, then half of the cheese.
  5. Repeat layers, finishing with cheese on top.
  6. Bake for 30-35 minutes or until bubbly.

Notes

  • This casserole can be prepared a day in advance and baked just before serving.
  • For even more flavor, add black beans or corn to the chicken mixture.
