- 3 cups cooked, shredded chicken
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 cup salsa
- 2 cups shredded cheese (cheddar and monterey jack mix)
- 12 corn tortillas, cut into quarters
- 1/2 cup chopped onion
- 1/2 cup bell pepper, diced
- 1 tablespoon taco seasoning
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine chicken, both soups, salsa, and seasonings. Mix well.
- Layer half of the tortillas in a greased 9×13 inch baking dish.
- Spread half of the chicken mixture over tortillas, then half of the cheese.
- Repeat layers, finishing with cheese on top.
- Bake for 30-35 minutes or until bubbly.
Notes
- This casserole can be prepared a day in advance and baked just before serving.
- For even more flavor, add black beans or corn to the chicken mixture.
