  • 4 chicken thighs
  • 2 peaches, diced
  • 2 jalapenos, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until translucent.
  3. Add diced peaches and jalapenos, cooking for another 5 minutes.
  4. Season chicken thighs with salt, pepper, paprika, and cayenne pepper.
  5. In a baking dish, place chicken and top with sautéed mixture.
  6. Bake for 25-30 minutes, or until chicken is cooked through.

Notes

  • For more heat, leave the seeds in the jalapenos.
