  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 4 cups chicken stock
  • 1 cup cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup uncooked pasta
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions, garlic, carrots, and celery. Sauté until the vegetables are soft.
  3. Pour in the chicken stock and bring to a boil.
  4. Add the shredded chicken, thyme, salt, and pepper.
  5. Stir in the uncooked pasta and cook until tender.
  6. Remove from heat and stir in the parsley before serving.
