- 1 cup diced onions
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup diced celery
- 4 cups chicken stock
- 1 cup cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup uncooked pasta
- 1/4 cup chopped fresh parsley
- In a large pot, heat the olive oil over medium heat.
- Add the onions, garlic, carrots, and celery. Sauté until the vegetables are soft.
- Pour in the chicken stock and bring to a boil.
- Add the shredded chicken, thyme, salt, and pepper.
- Stir in the uncooked pasta and cook until tender.
