  • 1 teaspoon pumpkin spice
  • 1 cup vegan chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, melted coconut oil, brown sugar, almond milk, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking soda, salt, and pumpkin spice.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the vegan chocolate chips.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes, or until the edges are golden.
