- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onions
- 3 cloves minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 cup wild rice blend
- 6 cups low-sodium chicken broth
- 1 cup heavy cream
- salt to taste
- pepper to taste
- Heat the olive oil in the Instant Pot using the ‘Sauté’ function.
- Add the chicken and cook until browned on both sides, about 4 minutes.
- Add the carrots, celery, onions, garlic, thyme, and rosemary. Sauté for 3 minutes.
- Stir in the wild rice and chicken broth. Secure the lid and set the Instant Pot to ‘Manual’ for 25 minutes.
- Once cooking is complete, allow for a natural release.
- Remove the chicken, shred, and return it to the pot.
- Stir in the heavy cream, and season with salt and pepper to taste.
Notes
- Adjust the thickness of the soup by varying the amount of cream.
- For extra flavor, add fresh herbs before serving.
