Instant Pot Panera Bread Chicken Wild Rice Soup

A comforting and hearty soup inspired by the famous Panera Bread Chicken Wild Rice Soup, made easy with the Instant Pot.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onions
  • 3 cloves minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup wild rice blend
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • salt to taste
  • pepper to taste

Instructions

  1. Heat the olive oil in the Instant Pot using the ‘Sauté’ function.
  2. Add the chicken and cook until browned on both sides, about 4 minutes.
  3. Add the carrots, celery, onions, garlic, thyme, and rosemary. Sauté for 3 minutes.
  4. Stir in the wild rice and chicken broth. Secure the lid and set the Instant Pot to ‘Manual’ for 25 minutes.
  5. Once cooking is complete, allow for a natural release.
  6. Remove the chicken, shred, and return it to the pot.
  7. Stir in the heavy cream, and season with salt and pepper to taste.

Notes

  • Adjust the thickness of the soup by varying the amount of cream.
  • For extra flavor, add fresh herbs before serving.
