Instant Pot Copycat Panera’s Broccoli and Cheddar Soup

A delicious and creamy broccoli and cheddar soup made in the Instant Pot, inspired by Panera’s favorite.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup shredded carrots
  • 2 cups cheddar cheese, shredded
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Set the Instant Pot to sauté mode and add olive oil.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and sauté for an additional minute.
  4. Add the broccoli florets, vegetable broth, shredded carrots, salt, and black pepper.
  5. Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
  6. Once done, perform a quick release of the pressure.
  7. Stir in the milk and cheddar cheese until melted and creamy.

Notes

  • For extra creaminess, use half-and-half instead of milk.
  • Feel free to add additional spices like paprika or cayenne for a kick.
