Instant Pot Beef Barley Soup Recipe

Ingredients

  • 1 pound beef stew meat
  • 1 cup barley
  • 4 cups beef broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Turn on the Instant Pot and select the sauté function. Add beef and brown on all sides.
  2. Add onion, carrots, celery, and garlic; sauté for a few minutes.
  3. Stir in barley, broth, thyme, salt, and pepper.
  4. Seal the lid and cook on high pressure for 25 minutes.
  5. Release pressure and serve hot.

Notes

  • For extra flavor, add a bay leaf while cooking.
  • Top with fresh parsley before serving.
