  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups chopped kale
  • 1 cup spinach
  • 1 cup green peas
  • 1 avocado, diced
  • 2 tablespoons lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Pour in vegetable broth and bring to a boil.
  4. Add kale, spinach, and green peas, cooking until tender.
  5. Remove from heat and stir in diced avocado and lemon juice.
  6. Season with salt and black pepper to taste.
