1 cup quinoa
2 cups water
1 large apple, diced
1/2 cup chopped walnuts
1/4 cup dried cranberries
2 tablespoons honey
2 tablespoons Dijon mustard
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 shallots, thinly sliced
Instructions
Rinse quinoa under cold water. In a pot, combine quinoa and water; bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed.
In a separate bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper.
Once quinoa is cooked, fluff with a fork and let cool.
In a frying pan, sauté shallots in a bit of oil until crispy.
In a large bowl, combine quinoa, apple, walnuts, cranberries, and the dressing; toss to combine.
Top the salad with crispy shallots before serving.
Notes
For extra flavor, add feta cheese or substitute walnuts with pecans.
