2 pounds beef chuck, cut into cubes
4 cups beef broth
3 medium carrots, sliced
3 medium potatoes, diced
1 onion, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon black pepper
1 tablespoon salt, or to taste
2 tablespoons olive oil
Instructions
Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides.
Transfer the browned beef to the crockpot.
Add the carrots, potatoes, onion, and garlic to the crockpot.
In a small bowl, mix the beef broth, tomato paste, Worcestershire sauce, thyme, pepper, and salt. Pour mixture over the meat and vegetables in the crockpot.
Cover and cook on low for 8 hours or until the beef is tender.
Serve hot and enjoy.
Notes
For a thicker stew, mix some cornstarch with water and stir into the stew during the last hour of cooking.
Feel free to add other vegetables like peas or corn for added flavor.
