- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 cup corn, frozen or canned
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 lime, juiced
- 1 cup tortilla strips
- In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until fragrant.
- Add chicken breasts, chicken broth, diced tomatoes, corn, chili powder, cumin, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer for 20-25 minutes, until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Stir in lime juice and tortilla strips just before serving.
Notes
- For added flavor, top with avocado and cilantro.
- Can substitute chicken with turkey or beef.
