Healthy Chicken Tortilla Soup

A hearty and nutritious chicken tortilla soup that’s perfect for cozy nights.

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 avocado, sliced
  • 1/2 cup cilantro, chopped
  • 12 corn tortillas, cut into strips

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, and bell pepper; sauté until softened.
  2. Add chicken breasts and cook for about 5 minutes, until browned.
  3. Stir in diced tomatoes, chicken broth, black beans, corn, chili powder, cumin, salt, and pepper.
  4. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until the chicken is cooked through.
  5. Remove the chicken, shred it with two forks, and return it to the pot.
  6. Serve hot, garnished with avocado, cilantro, and tortilla strips.

Notes

  • For added spice, include jalapeños.
  • This soup can be made ahead and stored in the fridge.
