Healthy Chicken Tortilla Soup

  • 1 tablespoon olive oil
  • 1 pound skinless chicken breasts
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 1 cup corn (fresh or frozen)
  • 1 bell pepper, chopped
  • 1 jalapeño, diced (optional)
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • 1 cup tortilla strips

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and minced garlic, sauté until softened.
  3. Stir in chili powder and cumin, cooking for 1 minute.
  4. Add the chicken breasts, diced tomatoes, chicken broth, corn, bell pepper, and jalapeño.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes until chicken is cooked through.
  6. Remove chicken, shred it, and return to the pot.
  7. Stir in lime juice and cilantro just before serving.
  8. Garnish with avocado and tortilla strips.

Notes

  • For a vegetarian option, substitute chicken with beans or additional vegetables.
  • Store leftovers in the refrigerator for up to 3 days.
