- 1 pound skinless chicken breasts
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- 1 cup corn (fresh or frozen)
- 1 bell pepper, chopped
- 1 jalapeño, diced (optional)
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- 1 avocado, sliced
- 1 cup tortilla strips
- In a large pot, heat olive oil over medium heat.
- Add diced onion and minced garlic, sauté until softened.
- Stir in chili powder and cumin, cooking for 1 minute.
- Add the chicken breasts, diced tomatoes, chicken broth, corn, bell pepper, and jalapeño.
- Bring to a boil, then reduce heat and simmer for 20 minutes until chicken is cooked through.
- Remove chicken, shred it, and return to the pot.
- Stir in lime juice and cilantro just before serving.
- Garnish with avocado and tortilla strips.
