- 3 ripe bananas
- 1 cup rolled oats
- 1/2 cup honey or maple syrup
- 1/2 cup Greek yogurt
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mash the ripe bananas until smooth.
- Add in the eggs, Greek yogurt, honey or maple syrup, and vanilla extract, and mix until well combined.
- In another bowl, combine the rolled oats, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
- Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
- These muffins can be customized with add-ins such as chocolate chips or nuts.
