Healthy Banana Oatmeal Muffins

These Healthy Banana Oatmeal Muffins are a delicious and nutritious option for breakfast or a snack.

  • 3 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add in the eggs, Greek yogurt, honey or maple syrup, and vanilla extract, and mix until well combined.
  4. In another bowl, combine the rolled oats, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • These muffins can be customized with add-ins such as chocolate chips or nuts.
  • Adjust sweetness according to your preference by adding more or less honey/maple syrup.
