Ingredients

  • 2 stalks celery, chopped
  • 4 cups vegetable or chicken broth

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked chicken, shredded (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until softened.
  3. Stir in the carrots and celery, cooking for an additional 5 minutes.
  4. Pour in the broth and bring to a boil.
  5. Add the kale, thyme, salt, and black pepper.
  6. Reduce heat and simmer for 20 minutes.
  7. If using, add the shredded chicken and heat through.
