  • 1 pound ground beef
  • 4 strips turkey bacon
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup chopped onions
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside, leaving the bacon grease in the pot.
  2. Add ground beef to the pot and cook until browned. Drain excess fat if necessary.
  3. Stir in the onions, carrots, and potatoes, and cook for 5 minutes.
  4. Add the diced tomatoes and beef broth to the pot.
  5. Season with garlic powder, onion powder, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes or until vegetables are tender.
  7. Chop the cooked turkey bacon and stir it back into the stew before serving.

Notes

  • Feel free to add any other vegetables you like to this stew for extra flavor.
