- 1 pound ground beef
- 4 strips turkey bacon
- 2 cups diced potatoes
- 1 cup diced carrots
- 1 cup chopped onions
- 1 can (14.5 ounces) diced tomatoes
- 4 cups beef broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt to taste
- Pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and set aside, leaving the bacon grease in the pot.
- Add ground beef to the pot and cook until browned. Drain excess fat if necessary.
- Stir in the onions, carrots, and potatoes, and cook for 5 minutes.
- Add the diced tomatoes and beef broth to the pot.
- Season with garlic powder, onion powder, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes or until vegetables are tender.
- Chop the cooked turkey bacon and stir it back into the stew before serving.
