Green Enchilada Chicken Soup

A warm and flavorful dish that combines the richness of enchiladas with hearty chicken soup.

  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup green enchilada sauce
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cilantro, chopped
  • 1 avocado, diced
  • 1 lime, juiced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and cook until translucent.
  2. Add minced garlic and cook for another minute.
  3. Stir in the shredded chicken, black beans, corn, cumin, chili powder, salt, and black pepper.
  4. Pour in vegetable broth and green enchilada sauce. Bring to a simmer.
  5. Cook for about 15 minutes, allowing flavors to meld.
  6. Stir in cilantro and lime juice just before serving.

  • For added creaminess, consider topping with sour cream or cheese.
