Ingredients

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Cook the pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt, and pepper to make the vinaigrette.
