- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound chicken breast, cooked and shredded
- 6 cups chicken broth
- 1 cup uncooked orzo
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 teaspoon dried oregano
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the cooked chicken and chicken broth, then bring to a boil.
- Stir in the orzo and cook according to package instructions.
- In a bowl, whisk together the eggs and lemon juice until smooth.
- Slowly add a ladle of hot soup to the egg mixture, whisking constantly to temper the eggs.
- Pour the egg mixture back into the soup and stir to combine. Add oregano, parsley, and season with salt and pepper.
- Serve hot, garnished with additional parsley if desired.
Notes
- For a thicker soup, reduce the amount of broth used.
