  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound chicken breast, cooked and shredded
  • 6 cups chicken broth
  • 1 cup uncooked orzo
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the cooked chicken and chicken broth, then bring to a boil.
  3. Stir in the orzo and cook according to package instructions.
  4. In a bowl, whisk together the eggs and lemon juice until smooth.
  5. Slowly add a ladle of hot soup to the egg mixture, whisking constantly to temper the eggs.
  6. Pour the egg mixture back into the soup and stir to combine. Add oregano, parsley, and season with salt and pepper.
  7. Serve hot, garnished with additional parsley if desired.

Notes

  • For a thicker soup, reduce the amount of broth used.
  • Leftover soup can be reheated gently on the stove.
