- 2 cups basmati rice
- 4 cups vegetable broth
- 4 cloves garlic, minced
- 1 teaspoon turmeric powder
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- Rinse the basmati rice under cold water until the water runs clear.
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the turmeric powder and stir for an additional 30 seconds.
- Add the rinsed rice to the pot and stir well to coat the rice with the garlic and turmeric mixture.
- Pour in the vegetable broth and add the salt and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes or until the rice is tender and has absorbed the liquid.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and stir in the chopped parsley before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper while sautéing the garlic.
