- 3 pounds chuck roast
- 2 cups sliced onions
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup dry white wine
- 2 tablespoons Worcestershire sauce
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt to taste
- Black pepper to taste
- 4 slices Swiss cheese
- Preheat the oven to 325°F (165°C).
- Season the chuck roast with salt and black pepper.
- In a large skillet, brown the roast on all sides over medium-high heat, then transfer it to a Dutch oven.
- In the same skillet, sauté the sliced onions until caramelized, then add garlic and cook for another minute.
- Add the beef broth, wine, Worcestershire sauce, thyme, and rosemary to the skillet and mix well.
- Pour the mixture over the roast in the Dutch oven.
- Cover and cook in the preheated oven for 3 hours.
- During the last 10 minutes of cooking, place slices of Swiss cheese on top of the roast and return to the oven until melted.
