French Onion Pot Roast

  • 3 pounds chuck roast
  • 2 cups sliced onions
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup dry white wine
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt to taste
  • Black pepper to taste
  • 4 slices Swiss cheese

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Season the chuck roast with salt and black pepper.
  3. In a large skillet, brown the roast on all sides over medium-high heat, then transfer it to a Dutch oven.
  4. In the same skillet, sauté the sliced onions until caramelized, then add garlic and cook for another minute.
  5. Add the beef broth, wine, Worcestershire sauce, thyme, and rosemary to the skillet and mix well.
  6. Pour the mixture over the roast in the Dutch oven.
  7. Cover and cook in the preheated oven for 3 hours.
  8. During the last 10 minutes of cooking, place slices of Swiss cheese on top of the roast and return to the oven until melted.

Notes
