Flavorful Spicy Ground Beef & Sweet Potato Protein Bowl

A delicious and nutritious protein bowl featuring spicy ground beef and sweet potatoes.

Ingredients

  • 1 pound ground beef
  • 2 medium sweet potatoes
  • 1 onion, diced
  • 2 clove garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • 1 cup black beans, drained and rinsed
  • ½ cup corn, frozen or canned
  • 1 avocado, sliced

Instructions

  1. In a skillet, heat olive oil over medium-high heat.
  2. Add diced onion and minced garlic, sauté until translucent.
  3. Stir in ground beef, cooking until browned.
  4. Add chili powder, cumin, paprika, salt, and pepper; mix thoroughly.
  5. Cube sweet potatoes and add to the skillet with a splash of water. Cover and cook until tender.
  6. Stir in black beans and corn; cook until heated through.
  7. Serve in bowls topped with slices of avocado.
