  • 1 kg chicken, cut into pieces
  • 1/4 cup vinegar
  • 1/4 cup soy sauce
  • 1/4 cup calamansi juice
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon lemongrass, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon brown sugar
  • 3 tablespoons oil for grilling

Instructions

  1. In a bowl, combine vinegar, soy sauce, calamansi juice, garlic, ginger, lemongrass, salt, pepper, and brown sugar to make the marinade.
  2. Add the chicken to the marinade, ensuring it’s well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium heat and lightly oil the grates.
  4. Remove chicken from the marinade and grill for 15-20 minutes, turning occasionally until fully cooked and juices run clear.
