1 kg chicken, cut into pieces
1/4 cup vinegar
1/4 cup soy sauce
1/4 cup calamansi juice
1 tablespoon garlic, minced
1 tablespoon ginger, minced
1 tablespoon lemongrass, minced
1 teaspoon salt
1 teaspoon pepper
1 tablespoon brown sugar
3 tablespoons oil for grilling
Instructions
In a bowl, combine vinegar, soy sauce, calamansi juice, garlic, ginger, lemongrass, salt, pepper, and brown sugar to make the marinade.
Add the chicken to the marinade, ensuring it’s well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Preheat the grill to medium heat and lightly oil the grates.
Remove chicken from the marinade and grill for 15-20 minutes, turning occasionally until fully cooked and juices run clear.
Serve hot, with steamed rice or your favorite sides.
