- 1 pork tenderloin
- 1 cup dried cranberries
- 1 cup spinach, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup feta cheese, crumbled
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat, sauté garlic and onion until translucent.
- Add spinach and cranberries, cooking until spinach is wilted. Season with salt and pepper.
- Remove from heat and mix in feta cheese.
- Slice the pork tenderloin in the middle, creating a pocket. Stuff with the spinach mixture.
