  • 1 pork tenderloin
  • 1 cup dried cranberries
  • 1 cup spinach, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat, sauté garlic and onion until translucent.
  3. Add spinach and cranberries, cooking until spinach is wilted. Season with salt and pepper.
  4. Remove from heat and mix in feta cheese.
  5. Slice the pork tenderloin in the middle, creating a pocket. Stuff with the spinach mixture.
  6. Place the tenderloin in a roasting pan and bake for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  7. Let it rest for 5 minutes before slicing.
