Egg Salad Sandwich

Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup celery, diced
  • 1/4 cup green onion, chopped
  • 2 slices turkey bacon, cooked and chopped
  • Salt and pepper to taste
  • 4 slices of bread

Instructions

  1. Hard boil the eggs, let them cool, and peel them.
  2. In a bowl, roughly chop the eggs and add mayonnaise, Dijon mustard, celery, green onion, turkey bacon, salt, and pepper.
  3. Mix until well combined.
  4. Spread the egg salad mixture on two slices of bread and top with the remaining slices.
  5. Cut the sandwiches in half and serve immediately.
