  • 4 large eggs
  • 4 strips turkey bacon
  • 1 cup diced chicken ham
  • 1 cup shredded cheese
  • 1/4 cup chopped green onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package empanada dough

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook turkey bacon until crispy, then chop into pieces.
  3. In a bowl, whisk eggs, then add chicken ham, cheese, green onions, salt, and pepper.
  4. In a heated skillet, scramble the egg mixture until fully cooked.
  5. Take empanada dough and fill with the scrambled eggs and bacon mixture.
  6. Fold and seal the empanadas, then place on a baking sheet.
  7. Bake for 20-25 minutes or until golden brown.
