- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup green beans, trimmed and chopped
- 1 cup zucchini, diced
- 1 cup pasta (small shape)
- Salt and pepper to taste
- In a large pot, heat the olive oil over medium heat.
- Add the onion, garlic, carrots, and celery and sauté until softened.
- Stir in the oregano and basil, and cook for 1 minute.
- Add the diced tomatoes and vegetable broth, and bring to a boil.
- Reduce heat and add the kidney beans, green beans, zucchini, and pasta.
- Simmer until the pasta is cooked, about 10 minutes.
- Season with salt and pepper before serving.
