  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup green beans, trimmed and chopped
  • 1 cup zucchini, diced
  • 1 cup pasta (small shape)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, carrots, and celery and sauté until softened.
  3. Stir in the oregano and basil, and cook for 1 minute.
  4. Add the diced tomatoes and vegetable broth, and bring to a boil.
  5. Reduce heat and add the kidney beans, green beans, zucchini, and pasta.
  6. Simmer until the pasta is cooked, about 10 minutes.
  7. Season with salt and pepper before serving.
