Easy Mexican Stuffed Baked Potatoes

  • 4 large baking potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 green onions, sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the baking potatoes, then poke holes in them with a fork.
  3. Wrap each potato in foil and bake for about 45-60 minutes until tender.
  4. In a mixing bowl, combine the turkey bacon, black beans, corn, cheese, sour cream, taco seasoning, salt, and pepper.
  5. Once the potatoes are done, remove them from the oven and let them cool slightly.
  6. Carefully slice the potatoes open and fluff the insides with a fork.
  7. Spoon the turkey bacon mixture into each potato and top with sliced green onions.
  8. Serve hot and enjoy!

Notes

  • For a spicier kick, add diced jalapeños to the filling.
  • You can substitute quinoa for a healthier base.
