Easy Lemon Chicken Piccata

A delicious, lemony twist on classic chicken piccata that is easy to prepare.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, drained
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Flatten chicken breasts to an even thickness.
  2. Season with salt and pepper, then dredge in flour.
  3. Heat butter and olive oil in a skillet over medium heat.
  4. Cook chicken for 5-7 minutes on each side until golden brown and cooked through.
  5. Remove chicken and set aside.
  6. Add chicken broth, lemon juice, and capers to the skillet, scraping up any bits.
  7. Return chicken to the skillet and simmer for a few minutes.
  8. Serve with parsley sprinkled on top.
