Easy Lasagna Soup No Ricotta

A comforting and hearty twist on classic lasagna, this Easy Lasagna Soup is made with turkey bacon and no ricotta.

  • 8 ounces pasta
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups chicken broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook the pasta according to package directions; drain and set aside.
  2. In a large pot, cook the turkey bacon until crispy. Remove and crumble, leaving some drippings in the pot.
  3. Add ground turkey, onion, and garlic to the pot. Cook until the turkey is browned.
  4. Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil.
  5. Add the cooked pasta and crumbled turkey bacon. Stir and let simmer for 10 minutes.
  6. Serve hot, topped with shredded mozzarella cheese.

  • For a vegetarian version, substitute turkey bacon with mushrooms.
