Easy Ina Garten Butternut Squash Soup Recipe

A delightful and easy recipe for butternut squash soup incorporating delicious turkey bacon.

Ingredients

  • 2 tablespoons olive oil
  • 4 slices turkey bacon
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups butternut squash, peeled and cubed
  • 4 cups vegetable broth
  • 1 teaspoon ground ginger
  • Salt to taste
  • Freshly ground black pepper to taste
  • ½ cup heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add the onion and garlic, sauté until soft.
  3. Add the butternut squash, vegetable broth, and ground ginger. Simmer until the squash is tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the heavy cream, and season with salt and pepper.
  6. Serve warm, topped with crispy turkey bacon.

Notes

  • This soup can be made a day ahead and reheated before serving.
  • For extra flavor, add a pinch of nutmeg.
