Easy Ground Beef Enchiladas

  • 1 can enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 onion, chopped
  • 1 bell pepper, diced

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, brown the ground beef with chopped onion and bell pepper until cooked through.
  3. Stir in cumin and chili powder, then add half of the enchilada sauce.
  4. Fill each tortilla with the beef mixture, roll them up, and place in a baking dish.
  5. Top with remaining enchilada sauce and cheese.
  6. Bake for 20 minutes or until cheese is bubbly.
