- 2 cups shredded cooked chicken
- 1 can green enchilada sauce
- 4 cups chicken broth
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup sour cream
- 1 cup shredded cheese
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- In a large pot, sauté onion and garlic until translucent.
- Add shredded chicken, green enchilada sauce, chicken broth, black beans, corn, cumin, and chili powder. Bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- Stir in sour cream, lime juice, and half of the cilantro.
- Serve hot, garnished with remaining cilantro and shredded cheese.

- For a spicier soup, add diced jalapeños.
