- 4 large onions, thinly sliced
- 4 slices turkey bacon, chopped
- 4 cups beef broth
- 1 teaspoon sugar
- 1 tablespoon fresh thyme leaves
- 1 bay leaf
- 1 cup shredded cheese (Gruyère or Swiss)
- 1 tablespoon balsamic vinegar
- salt and pepper to taste
- 4 slices of baguette, toasted
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add onions to the pot and cook until caramelized, about 20 minutes.
- Stir in sugar and thyme, then add beef broth and bay leaf. Simmer for 30 minutes.
- Remove bay leaf and add balsamic vinegar. Season with salt and pepper.
- Serve soup in bowls, top with toasted baguette slices and shredded cheese.
- Broil until cheese is bubbly and golden brown.
