  • 4 boneless, skinless chicken breasts
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 2 cups breadcrumbs
  • vegetable oil for frying

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the softened butter, garlic, parsley, lemon juice, salt, and pepper until well combined.
  3. Use a sharp knife to cut a pocket into each chicken breast and fill it with the garlic herb butter mixture.
  4. Secure the openings with toothpicks or kitchen twine.
  5. Dredge each stuffed chicken breast in flour, then dip into beaten eggs, and finally coat with breadcrumbs.
  6. Heat vegetable oil in a skillet over medium heat and fry the chicken until golden brown on both sides.
  7. Transfer the chicken to a baking dish and bake for 20-25 minutes or until fully cooked.
  8. Remove from the oven and let sit for a few minutes before serving.

Notes

  • For an extra touch, add more herbs like dill or chives to the butter mixture.
