Easy Chicken and Rice Soup

A warm and comforting chicken and rice soup that’s easy to make and perfect for any day.

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until softened.
  2. Add garlic and thyme, cooking for an additional minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the rice and return to a boil; then reduce heat and let simmer for about 15 minutes.
  5. Add the shredded chicken, salt, and pepper; cook until heated through.
  6. Adjust seasoning as needed and serve hot.

Notes

  • Feel free to add other vegetables like peas or corn for added nutrition.
  • This soup can be made in a slow cooker as well; just add all ingredients and cook on low for 6-8 hours.
