- 1 pound bratwurst sausage
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups potatoes, diced
- 2 cups kale, chopped
- 1 teaspoon dried thyme
- Salt to taste
- Pepper to taste
