  • 4 large potatoes, peeled and diced
  • 1 cup turkey bacon, cooked and crumbled
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped green onions

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the chopped onion and garlic to the pot and sauté until translucent.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  4. Using a potato masher or immersion blender, mash the potatoes to your desired consistency.
  5. Stir in the heavy cream, cheddar cheese, salt, and pepper. Mix until the cheese is melted and everything is well combined.
  6. Serve hot, topped with crumbled turkey bacon and chopped green onions.

Notes

  • For a lighter version, you can substitute half-and-half for the heavy cream.
  • Add more vegetables like carrots or celery for extra flavor.
