- 4 large potatoes, peeled and diced
- 1 cup turkey bacon, cooked and crumbled
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped green onions
- In a large pot, cook the turkey bacon until crispy. Remove and set aside, leaving the drippings in the pot.
- Add the chopped onion and garlic to the pot and sauté until translucent.
- Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
