Easy Asian Cucumber Salad

Ingredients

  • 2 large cucumbers
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Wash and thinly slice the cucumbers.
  2. In a bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, ginger, and garlic.
  3. Add the sliced cucumbers to the dressing and mix well.
  4. Top with green onions and sesame seeds.
  5. Serve immediately or chill in the refrigerator for 15 minutes before serving.
