Crockpot Birria Tacos

Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 2 cups beef broth
  • 3 dried guajillo chiles, stems and seeds removed
  • 2 dried ancho chiles, stems and seeds removed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. In a skillet, heat olive oil over medium heat. Sear the beef chuck roast on all sides until browned.
  2. In a blender, combine beef broth, guajillo chiles, ancho chiles, onion, garlic, cumin, oregano, black pepper, and salt. Blend until smooth.
  3. Place the seared beef roast in the crockpot and pour the blended sauce over it.
  4. Cook on low for 8 hours or on high for 4 hours until the meat is tender.
  5. Remove the meat, shred it, and serve in tortillas with your favorite toppings.

Notes

  • For extra flavor, add a splash of lime juice before serving.
