  • 6 egg roll wrappers
  • 1 cup corn kernels
  • 1/2 cup cream cheese, softened
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 tablespoon mayo
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoon chopped cilantro
  • 12 avocados
  • 1 tablespoon lime juice
  • Salt to taste

Instructions

  1. In a bowl, mix the corn, cream cheese, shredded cheese, mayo, chili powder, garlic powder, and cilantro until well combined.
  2. Lay one egg roll wrapper flat and place 2-3 tablespoons of the filling in the center. Roll the wrapper tightly, folding in the sides as you go.
  3. Fry the egg rolls in hot oil until golden brown and crispy.
  4. In a separate bowl, mash the avocados and mix with lime juice and salt to create the avocado sauce.
  5. Serve the crispy egg rolls alongside the avocado sauce for dipping.
