Creamy Tuscan Salmon (30 Minute Dinner!)

Ingredients

  • 2 fillets salmon
  • 1 tablespoon olive oil
  • 2 cups spinach
  • 1/2 cup cherry tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup parmesan cheese
  • 2 cloves garlic
  • 1 teaspoon Italian seasoning
  • salt to taste
  • pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season the salmon with salt and pepper, then add to the pan.
  3. Cook for about 4-5 minutes on each side until cooked through.
  4. Remove the salmon and set aside.
  5. In the same pan, add garlic and sauté for 1 minute.
  6. Add spinach and cherry tomatoes, cooking until spinach has wilted.
  7. Pour in the heavy cream and stir in the parmesan and Italian seasoning.
  8. Return the salmon to the pan and spoon the sauce over it.
  9. Serve immediately.
