- 9 sheets lasagna noodles
- 2 tablespoons olive oil
- 1 cup chopped onions
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 10 ounces fresh spinach
- 15 ounces ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups marinara sauce
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions and set aside.
- In a skillet, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
- Add sliced mushrooms and cook until tender. Stir in fresh spinach and cook until wilted.
- In a bowl, mix ricotta cheese, Italian seasoning, salt, and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, followed by half of the ricotta mixture, half of the sautéed vegetables, a third of the mozzarella cheese, and a layer of marinara sauce.
- Repeat the layers, finishing with the remaining noodles, marinara sauce, and top with the remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
