Creamy Spinach Mushroom Lasagna

  • 9 sheets lasagna noodles
  • 2 tablespoons olive oil
  • 1 cup chopped onions
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 10 ounces fresh spinach
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
  4. Add sliced mushrooms and cook until tender. Stir in fresh spinach and cook until wilted.
  5. In a bowl, mix ricotta cheese, Italian seasoning, salt, and pepper.
  6. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  7. Layer 3 lasagna noodles, followed by half of the ricotta mixture, half of the sautéed vegetables, a third of the mozzarella cheese, and a layer of marinara sauce.
  8. Repeat the layers, finishing with the remaining noodles, marinara sauce, and top with the remaining mozzarella and Parmesan cheese.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden.
  10. Let it cool for 10 minutes before slicing and serving.

Notes

  • For extra creaminess, add cream cheese to the ricotta mixture.
  • Adjust seasoning to taste.
